1. Peel and slice a carrot. The thickness of each slice is approximately 1/3 of  the diameter of the carrot.
2. Carve one half of the first petal, then the second petal from behind the first petal.
3. Continue carving the first layer of petals to have the previous petal overlapped the next. Don't be afraid to carve off a large portion under the petal to give generous space between petals.
4. Always shave off underneath the petals to round it for the next layer.
6. The circles of layers get smaller towards the center, so do the petal sizes. You can make these carrot roses few days ahead. They keep well - submerged in water and refrigerated.
5. You do not have to overlap the petals of second or third layers, as long as you place the petals alternately.
Ms. Samruay Thammasakorn carves at least five roses per hour and few hundred per month as garnishes for her children's restaurants.
